Gardentalk – Garlic scapes

Master Gardentalk Ed Buyarski says hardneck garlic sends up little bulblets or scapes that can be harvested now as the garlic plant continues growing this season.

Garlic scapes can be used as a substitute for green onions and garlic bulbs in salads, soups, sauces, and pesto.

“The more they cook, the milder it gets,” Buyarski says. Most varieties may have a little bite, but they are usually milder than the garlic bulb.

Scapes can also be used to make garlic flavored vinegar and olive oil. Although, Buyarski suggests warming up the oil and raw garlic to kill any botulism spores.

“There is a concern from the home economists about the potential for botulism because in the oil is a no oxygen environment,” Buyarski says.
